Ack. It’s too hot out to even think about turning on the oven. Salads are feeling more and more ideal as summer progresses. Plus, they offer some variety and color to the typical week of chicken-breast-dinners. Not to mention the potential to be incredibly filling, nutrient-dense dishes. I’ve been browsing Pinterest for unique, not-too-complicated recipes to try this week, and these are the top five on my list:
1. Grilled Lemon Herb Mediterranean Chicken Salad from Karina at Cafe Delites

If you haven’t checked out Karina’s website yet, you should. Every recipe looks so fresh and inviting. I’m absolutely in awe. And if salads are what you’re after, she has recipes in spades.
2. Berry Feta Salad with Strawberry Poppy Seed Dressing by Jen at Carlsbad Cravings

This recipe intrigues me so much. The concept of a fruit salad with a hint of savory from the feta and red onion for dinner…it’s so different and sounds so refreshing.
3. Shrimp Avocado Taco Salad by Alyssa at The Recipe Critic

I’m a sucker for tacos and anything taco-related. Plus, I have some leftover shrimp hanging out in the freezer and black beans and corn on hand. What a perfect opportunity to make something delicious. Oh, and have a mentioned that I love ANYTHING with ranch dressing?
4. Hawaiian Grilled Chicken Mango Salad with Citrus Vinaigrette by Sarah at Whole and Heavenly Oven

Another thing I just so happen to have in my fridge! A delicious mango. I love working a meal around something I have that is perfectly ripe. Plus the colors in this salad are gorgeous!
5. Crunchy Thai Salad with Creamy Peanut Dressing by Jessica Gavin

This recipe would make my hubby very happy. He loves Thai food, and this dressing sounds divine. I love the range of textures and colors, plus it’s vegetarian–perfect for a Meatless Monday.
