As much as I love cauliflower and broccoli, it can get boring sometimes as a side dish. This very simple recipe gives the vegetables a pop of flavor and spice that complements a creamy dish, like my Health-ier (Ricotta, Cheddar, and Cauliflower) Mac ‘n’ Cheese. Plus, this meal combination allows you to use the whole vegetable, meaning you don’t have to worry about it going bad. Waste not, want not.

1 crown of broccoli
½ a head of cauliflower
Olive oil
1 ½ tsp. sambal oelek
Salt and pepper to taste
Get a double boiler started by filling the bottom with water and placing the apparatus over high heat. While it is heating, cut the broccoli and cauliflower into bite-size pieces. When the water begins to boil, dump the broccoli and cauliflower into the top of the double boiler, cover, and cook for 5-6 minutes, until they are almost cooked through.
Heat a skillet over medium heat with a drizzle of olive oil. Add the broccoli, cauliflower, sambal, salt, and pepper, and stir until the sambal is integrated. Cook for a couple minutes, allowing the vegetables to get some color. Taste and adjust for seasoning.
